JK diet 'discovery'

Here's some ancient history. I am acutely sensitive to whole grains, but the
reaction is delayed by two to four days. I get hives so massive I can't grasp
a pencil or put on my shoes. Over $1000 in allergy testing (skin scratch
tests only; no blood work) didn't find anything. A food log eventually did.
The last attack of hives I have had in the past 10 years was when I was
invited to the wedding of one of my grad students, and she had some Cuban
mystery dish at the reception that must have had some whole wheat in it.

Following up this insight that some allergic reactions are delayed (which the
dermatologist did confirm after being told), I pursued another trail for
another annoying reaction: spontaeous bursts of rage. I turned out that
in keeping a food log for that (eventually found due to raw tomatoes), I
discovered by accident that my pulling was also food related.

In general, I have found that delayed reactions are difficult to understand
without food logs, and that in general you get a lot of surprises from them.
I don't know how effective the blood tests are, as I have never had them done.
But I find that most doctors would rather pay you to go away than have to deal
with chronic allergy-related conditions: they are very difficult to track
down, *even* if you are motiveated to do so and already suspect them.
