Haute Cabrière PINOT NOIR 2000

Introduction:

Produced for the first time 1994, when the harvest was ripe as early as 3 January. Grapes could not get picked fast enough, a portion of the crop developed 12 Vol % alcohol, too high for Methode Classique. However, our Cellarmaster found that the blend of equal portions Chardonnay / Pinot Noir resulted in a wonderfully balanced wine, the French would call 'Champagne tranquil'.

Wine description: 2000 Chardonnay Pinot Noir

Chardonnay and Pinot Noir distinguish the style of the famous Champagne Houses. Chardonnay contributes elegance, Pinot Noir intensity and richness. This uniquely blended wine of Chardonnay / Pinot Noir, produced from whole bunch pressing, delights the eye with a blush of Salmon pink. Aromas of peaches entice on the bouquet. The fruit flavours follow onto the pallet with a long firm aftertaste - an experience typical of Cabriere wines, distinguishing them as ideal food wines. The flavours linger long on the tongue, enhancing the enjoyment of fine food.

Enjoy with all Mediterranean dishes, as the complexity of the wine can handle their strong flavours with ease. Also great with duck and chicken, fish, prawns, crayfish, and steak tartare. Dangerously delicious on its own.
